Bacon and cabbage

Black pudding – sausage made from cooked pig’s blood, pork fat, pork rind, pork shoulder, pork liver, oats, onion, wheat starch and seasoning

Boxty – finely grated raw potato and mashed potato mixed together with buttermilk and flour and fried on a griddle pan

Champ – mashed potatoes and chopped spring onions

Coddle – a stew made with sausages and rashes of bacon, potatoes and onions

Colcannon – mashed potatoes with kale (or cabbage)

Crubeens – Boiled pig’s feet

Potato Farl – a potato cake fried in a pan

Irish stew – a lamb casserole with potatoes, carrots and onions

Soda bread -  bread made with flour, buttermilk, bread soda and salt (no yeast)
